  • 1 cup chicken broth
  • 1 tbsp. fresh ginger, minced
  • 1 tbsp. garlic, minced
  • 2 tbsp. soy sauce
  • 1 1/4 lbs. thin catfish fillets
  • 6 large white mushrooms, sliced
  • 1/4 cup green onion, sliced
  • 1 tbsp. fresh cilantro, chopped

  1. Put chicken broth, ginger, and garlic in a wide pot with a lid.
  2. Bring the broth to a boil, reduce heat to medium-low, and simmer 3 to 5 minutes.
  3. Stir soy sauce into the broth mixture.
  4. Add catfish fillets to pot and spoon broth over the fillets.
  5. Cover, bring broth to a boil, and let cook for 3 minutes more.
  6. Add mushrooms, cover, and cook until the fish loses pinkness and begins to flake, about 3 minutes.
